To date, Vin Santo and Vin Santo Occhio di Pernice, are produced with the mother (yeast) which has been handed down from generation to generation and gives that ethereal flavor that has contributed to making Vin Santo Occhio di Pernice a unique wine .

This sweet wine is the result of an exceptionally long aging process during which more than half of this precious liquid evaporates. It has been calculated that with the same quantity of grapes used to produce one of the 375 ml bottles, twenty-four 750 ml bottles of a normal wine can be produced.

This Vin Santo is characterized by intense aromas of caramel and dark chocolate, softened by hints of acacia honey, thyme and nutmeg, which open an inviting note of candied orange and butter biscuits. On the palate this sweet wine reveals infinite gustatory sensations, including notes of figs, almonds, orange marmalade and roasted coffee beans. A perfect balance between sweetness and acidity leads to a long and sensual aftertaste.

After 10 years spent in the barrels, the Vin Santo Occhio Di pernice is finally ready to be tasted.
